A better tool, for better baking

You probably already have a whisk or stand mixer in your kitchen. After all, it is a fundamental baking tool. Therefore, why would you require another type of whisk?

That is, at least, what I believed. After that, I began using the dough whisk.

The name of this whisk encapsulates its primary benefits: It excels in easily combining thick, sticky bread doughs. However, it is not only a speciality tool; because to its distinctive (and perhaps strange-looking) design, it can also be used to mix a wide variety of baked items, from muffins to biscuits.

Gwen Adams, the marketing and public relations coordinator at King Arthur Flour, is such a lover of the dough whisk that she has named it one of her top three kitchen gadgets. She substitutes it for her stand mixer when making simple dishes such as cookies, muffins, and quick breads. “I also use it to get my bread dough started,” she explained. You know, the first mixture that is so sticky that it sticks to your hands? The dough whisk comes to the rescue.”

It’s also ideal for kid-friendly baking: “My three-year-old is the household’s official dough whisk user. Something about the way it’s constructed prevents the contents from flying out of the bowl when she stirs.” (Recipe tester Susan Reid also informed me that it makes an excellent bubble wand for children who prefer bubbles than baking.)

With such an open design, it’s almost unbelievable how well this whisk mixes. Not to mention how easy it is to clean. Here are a few baking jobs that it performs slightly better than other utensils.

1) Combine delicate batters, such as those for muffins and pancakes.

One of the most significant advantages of this whisk is that its open design enables gentle blending of batters that you do not want to overbeat for fear of toughening your baked goods. You know what I’m talking about: sweets such as muffins, pancakes, and cakes with an airy, fluffy crumb.

It’s ideal for integrating flour into recipes that require it at the very end of mixing, such as Back-to-Basics Yellow Cake, rather than relying on the flat beater attachment of the stand mixer. The same is true when whipped egg whites are incorporated into pancakes or other recipes.

2) Combine the sourdough starter and bread doughs in a mixing bowl.

While this whisk is ideal for gentle mixing, it is also ideal for thick, sticky combinations such as sourdough starter or no-knead pizza crust. Not only does it properly connect them, but it is also quite easy to clean. How frequently have you stood at the sink attempting to scrape stubborn dough specks off your utensils? Fortunately, the open nature of this whisk simplifies that chore considerably.

3) Combine a fruit pie filling in a bowl.

The dough whisk is designed for more than merely combining batters and bread doughs. Numerous King Arthur bakers recommend it for preparing fruit pie filling. It’s especially beneficial if you’re baking with delicate berries or other fruits that may bruise if handled excessively.

4) On a sheet pan, stir granola
By using the dough whisk, toss hot granola onto a baking sheet without breaking up those attractive clusters. Due to its wide width, you may mix your granola during the baking process to ensure consistent browning while retaining chunks.
